Get your bikini on, relax and sit back this summer with our pick of colourful summer cocktails. First of all, let’s start with a classic.

Mojito
Ingredients:1 ½ Limes
20 fresh Mint Leaves
2 tbsp white Sugar
Handful of Ice (crushed)
65ml White Rum
Soda Water
Fresh Mint Sprig to garnish
(To serve 1)
Squeeze the juice of the limes or add sliced limes into a glass with the sugar and mint. (Make sure you use a glass that isn’t too fragile, you’ll see why in this next part.) Then ‘Muddle’ together with the end of a clean rolling pin and mash it all together. Then simply, add the ice and the rum over the top slowly so that it melts together. Top up with soda water how you like it and stir well. Add a delicate sprig of mint and you’re ready to serve! Spanish for “daisy”, Margarita is the perfect summer tipple to brighten up your day, and this twist will give it extra sweetness.
Melon Margarita
Ingredients: 5 Watermelon cubes 30ml fresh Lime juice (freshly squeezed) 30ml Orange juice 45ml Tequila 1tbsp Agave Nectar Ice Watermelon and Thin Lime slice for garnish (To serve 1) This recipe is super simple. Crush the watermelon cubes at the bottom of a shaker glass and add the tequila, ice, lime juice, orange juice and agave syrup. Shake it up for roughly 10 seconds then strain and pour into a glass of ice. Garnish with watermelon and thin lime slice for a pretty finish. Seize the day and live life to the fullest with the following tasty summer cocktail!
Carpe Diem
Ingredients: 10 Strawberries (halved) 2 tbsp Vanilla Sugar 90ml Apple Juice 30ml Lime Juice 150ml Gin 8 Basil Leaves (torn) Champagne/sparkling wine (chilled) Ice Basil leaves to garnish (To serve 6) This one is quick and easy, just process the strawberries, sugar and juices in a blender until smooth and pour into glass with ice. Add the gin and basil and stir. Then add Champagne/wine and garnish with a basil leaf. A fabulous summer cocktail, now, guaranteed to get the pool party started.
Pomegranate Cosmos
Ingredients: 475ml Vodka 250ml Orange Liqueur, such as Cointreau 250ml Pomegranate Juice 125ml fresh Lime Juice Lime peel strips, to garnish (To serve 6) Mix the vodka, orange liqueur, pomegranate juice and lime juice in a jug and refrigerate until ready to use. Pour the mixture into frozen martini glasses with a delicate twist of lime peel and serve.
Berry Daiquiri
Ingredients: 175g ripe Strawberries/200g Raspberries (if using raspberries blend then sieve first to form a pip-less purée) Ice Half a Lime 1 tbsp Lemon Juice 100ml white Rum Small lime slice to serve (To serve 1) Crush your ice and add berries, lime and lemon juice and rum. Blend and pour into a chilled cocktail glass. Decorate with lime slice and serve.
Citrus Peach Cooler
Ingredients: 2 Lemons 2 Limes 1 thinly sliced Lemon 1 thinly sliced Lime Peach nectar Cloudy Lemonade A couple of Sliced Strawberries Sparkling Water Mint Sprigs Ice Squeeze 2 lemons and limes into a large jug. Add the sliced lemon and lime and throw in some ice. Put in the peach nectar so the jug is then filled to one third. Top up with lemonade. Add the strawberries and top up with sparkling water and mint sprigs.
Apple Glow Mocktail
Ingredients: 120ml chilled organic Apple Juice 120ml organic Grape Juice ½ honeydew Melon – seeds and rind removed Apple Slice for garnish (To serve 1) Mix the apple juice, grape juice and honeydew melon in a blender. Whizz for a minute or until the melon and juices are smooth. Pour into a chilled glass and garnish with apple slice. And for those who don’t have work in the morning, back to the cocktails…
Fresh Whisky Sours
Ingredients: 180ml Whisky 120ml Lemon juice (4 lemons) 120ml Lime juice (4 limes) 160ml sugar syrup, recipe follows Ice Maraschino cherries (To serve 4) For the sugar syrup: 240ml water 200g caster sugar Mix the whisky, lemon juice, lime juice and syrup (see below). Add ice and shake for 15 seconds. Pour into glasses. Add a maraschino cherry and serve ice cold. For the sugar syrup - Bring sugar and water to the boil and simmer until the sugar is completely dissolved. Chill
